 Becca at Whitman LibraryToday at Whitman Library we are baking Apple Yogurt Cake with a Cinnamon Streusel in the middle and on top!
Being a baker, I had to start with my strengths. The community box that I got from Christ Church South Philly included apples and yogurt, and I had the rest of the supplies on hand. I researched online and found a suitable, simple, easy recipe on kitchn.com:
Ingredients
- Cooking spray or olive oil
- 1 ½ cups whole regular or Greek yogurt
- 1 cup granulated sugar
- ⅔ cup olive oil
- ¼ cup lemon juice, bottled
- 3 large eggs
- 1 ½ teaspoons vanilla extract
- 1 ½ pounds apples
- 2 ½ cups all-purpose flour
- 2 ½ teaspoons baking powder
- ¾ teaspoon baking soda
- ½ teaspoon salt
- ½ teaspoon cinnamon
- A pinch of freshly ground nutmeg
Ingredients for Streusel in a small bowl
- 2 teaspoons ground cinnamon, divided
- ½ cup packed light or dark brown sugar
- 2 tablespoons unsalted butter, at room temperature

- Combine yogurt, sugar, olive oil, lemon juice, eggs, and vanilla in a large bowl and mix to combine. (Image below)
- Chop the apples into squares and add them to the bowl.
- Combine the flour, baking powder, baking soda, salt, nutmeg, and ½ teaspoon of cinnamon into a small bowl, no need for mixing.
- Add all of the dry ingredients in step #3 to the wet ingredients in step #1, and mix until fully combined and there is no flour left.
- Pour half of the batter into the pan. Sprinkle with half of the cinnamon-brown sugar mixture on top, dropping it on the batter in small lumps. Spread the rest of the batter over the top, then sprinkle with the remaining cinnamon-brown sugar. (Image below)
- Preheat oven to 350 degrees.
- Bake 30 minutes, rotate the pan, bake 30 more minutes, and then check with a toothpick until it comes out clean.
